Tear the cauliflower into medium-sized chunks, heat oil in the pan and add the chunks with a little sprinkle of salt. Cover the pan with a lid and cook on high heat for 15 minutes, or until the cauliflower is charred. Stirring often to prevent the cauliflower from burning. Remove from the pan, and give it a rough chop.

Vegetable filling: Allow your mixture to cool down completely before stuffing it inside the pastry. To make toasties or pineapple grilled cheese sandwiches, butter two slices of bread and add filling on top the non-buttered side (we want the buttered side to be grilled and crispy). Leave some space at the edges. When cutting the puff pastry, use a sharp clean knife and cut through the pastry rather than drag the knife through. I used a pizza slicer which actually worked well for mePress down the sides to seal. You can either crimp or press down with your finger or a fork. These curry blends come in different spice levels. I went for a mild one, and then if that’s not spicy enough for you, you can add in a touch of chilli powder. Sri Lankan curry powder would work too!
